Chicken Sliders, Homemade French Fries & Mexican Corn on the Cob

A couple of Chicken Sliders with a handful of Homemade French Fries and Corn on the Cob rolled in Cotija Cheese also known as Mexican Corn on the Cob is perfect for any weekend. It's a very simple dish to create with a taste that will have people wanting more.


Chicken Sliders
Ingredients
  • 2 lbs of ground chicken
  • 1/2 small onion chopped
  • 1/2 cup of italian bread crumbs
  • 1/2 cup of shredded colby jack cheese
  • 1 teaspoon of each:  celery salt, garlic powder, chili powder, ground paprika, ground cumin
  • 1 tablespoon of worcestershire sauce
  • 1 teaspoon of soy sauce
  • 1 teaspoon of chilli garlic sauce
  • 1/4 cup of beer
  • kosher salt or regular salt to taste
  • black pepper to taste 

Directions

  1. In a large bowl, combine the chicken and all ingredients. Mix all together well and let is sit in the refrigerator 4-6 hours (overnight is better). 
  2. Patties can be made ahead of time or can be made as you grill. 
  3. Preheat an outdoor grill for medium heat and lightly spray with cooking or oil spray.
  4. Grill over medium heat for 5 to 6 minutes per side, or to desired doneness.


Homemade French Fries
(twice fried)
 Personally I think that the taste of homemade French fries is far better then anything you will get from a fast food joint or even better then the ones you will get frozen from the store.

Ingredients

  • potatoes, corn or vegetable oil and salt

Directions

  1. Peel & wash potatoes and cut in to strips.
  2. Rinse them a couple of times to and then pre-soak them in luke warm water with a 1/2 tablespoon of salt.
  3. You can pat dry the potato strips and rest for 2-3 minutes prior frying them.
  4. Preheat your oil roughly 350-375 degrees. If you dont have a frying thermometer you can slowy add one potato strip to the oil. If the potatoe floats to the top the oil is ready.
  5. First you want to do what I call a "quick fry". Which means slowly drop the potatoes into the hot oil and take them just before they start getting an colorization. Let them rest a couple of minutes and then drop them back into the oil until golden brown. The reason I like to do this so the outside has that nice golden brown texture with a little crunch but yet the inside has a very soft texture. 
  6. Remove from oil and rest them on paper towels.
  7. Sprinkle some salt and sever them nice and hot


 

Mexican Corn on the Cob
 This is a relatively easy recipe that is very tasteful and unique.

Ingredients

  • 5-8 ears of corn, shucked
  • 1/4 cup of melted butter
  • 1/4 of olive oil
  • 1/4 cup mayonnaise
  • 1/2 tablespoon of ground cumin
  • 1/2 tablespoon of paprika
  • 1 cup grated cotija cheese
  • Juice from 1/4 of a lime

Directions

  1. In a small bowl combine the mayonnaise, ground cumin, paprika & lime juice
  2. Preheat an outdoor grill for medium-high heat.
  3. Brush olive oil on the corn
  4. Grill corn until they are lightly charred all over
  5. Once the corn are done, remove them of the gril and brush them with the melted butter
  6. Next spread the mayonnaise mixture and then sprinkle the grated Cotija cheese


This was a recipe I just did this past Memorial weekend & it turned out great. This is my first post and if you try this recipe out, I would like to get your feedback.
