Chicken Sliders |
- 2 lbs of ground chicken
- 1/2 small onion chopped
- 1/2 cup of italian bread crumbs
- 1/2 cup of shredded colby jack cheese
- 1 teaspoon of each: celery salt, garlic powder, chili powder, ground paprika, ground cumin
- 1 tablespoon of worcestershire sauce
- 1 teaspoon of soy sauce
- 1 teaspoon of chilli garlic sauce
- 1/4 cup of beer
- kosher salt or regular salt to taste
- black pepper to taste
Directions
- In a large bowl, combine the chicken and all ingredients. Mix all together well and let is sit in the refrigerator 4-6 hours (overnight is better).
- Patties can be made ahead of time or can be made as you grill.
- Preheat an outdoor grill for medium heat and lightly spray with cooking or oil spray.
- Grill over medium heat for 5 to 6 minutes per side, or to desired doneness.

Homemade French Fries (twice fried) |
Ingredients
- potatoes, corn or vegetable oil and salt
Directions
- Peel & wash potatoes and cut in to strips.
- Rinse them a couple of times to and then pre-soak them in luke warm water with a 1/2 tablespoon of salt.
- You can pat dry the potato strips and rest for 2-3 minutes prior frying them.
- Preheat your oil roughly 350-375 degrees. If you dont have a frying thermometer you can slowy add one potato strip to the oil. If the potatoe floats to the top the oil is ready.
- First you want to do what I call a "quick fry". Which means slowly drop the potatoes into the hot oil and take them just before they start getting an colorization. Let them rest a couple of minutes and then drop them back into the oil until golden brown. The reason I like to do this so the outside has that nice golden brown texture with a little crunch but yet the inside has a very soft texture.
- Remove from oil and rest them on paper towels.
- Sprinkle some salt and sever them nice and hot

Mexican Corn on the Cob |
Ingredients
- 5-8 ears of corn, shucked
- 1/4 cup of melted butter
- 1/4 of olive oil
- 1/4 cup mayonnaise
- 1/2 tablespoon of ground cumin
- 1/2 tablespoon of paprika
- 1 cup grated cotija cheese
- Juice from 1/4 of a lime
Directions
- In a small bowl combine the mayonnaise, ground cumin, paprika & lime juice
- Preheat an outdoor grill for medium-high heat.
- Brush olive oil on the corn
- Grill corn until they are lightly charred all over
- Once the corn are done, remove them of the gril and brush them with the melted butter
- Next spread the mayonnaise mixture and then sprinkle the grated Cotija cheese
This was a recipe I just did this past Memorial weekend & it turned out great. This is my first post and if you try this recipe out, I would like to get your feedback.
